It's peach season

We’re a little past the peach season, but because the weather is so crazy around here, we can still find plenty of varieties at our local farmers markets. This delicious fuzzy fruit is particularly wonderful to ward off diseases such as diabetes, metabolic syndrome and cardiovascular disease… That is of course if we don’t turn them into a delicious pie.

In this post, we wanted to share with you a couple of new recipes we created recently, as well as a classic combination that we enjoy often.

Peach and prosciutto salad

While melon and prosciutto are more commonly paired together, peaches are a great substitution around this time of year. To make this salad even brighter, we added raspberries and basil, as well as pine nuts and bocconcini mozzarella for good measure. 

Tomato and peach salad

Here’s a recipe that we’ve featured before and that we love so much. The sweetness of the peaches with the tomatoes go so well together. Toss it with a light dressing of olive oil, grainy mustard, honey, and wine vinegar. Sprinkle some chopped mint and add Wisconsin cheese curds for a little something salty.

Peaches and fried cheese
This is a twist on a classic Caribbean dessert usually made with guava shells or paste. In this case, we used Mexican farmers cheese and cooked the peaches with honey, brown sugar and butter. Super simple and a very unique finish to any meal.
