Learning to make pretzels

Oktoberfest was our excuse to give pretzel making another shot. As you all know, baking is not exactly our strong suit, but luckily we did pretty good… if you don’t judge the appearance! We tested a few recipes and this one gave us super soft pretzels that taste incredible with mustard, cream cheese or just plain kosher salt. Now, we just have to improve our rolling technique! Super soft pretzels — Ingredients:
  • 1 Cup of warm milk
  • 2 Tbsp organic sugar
  • 1 ½ Tsp Active dry yeast
  • 2 Tbsp butter
  • 2 ¼ Cups flour (and a little extra to work the dough)
  • 2 Cups water
  • 2 Tsp baking soda
  • Olive oil
  • Kosher salt
  1. Mix the milk with the sugar and active dry yeast. Let it rest for 10 minutes.
  2. Add the butter and half of the flour. Mix well before adding the rest of the flour. 
  3. Knead the dough until it forms a ball. (Use a little more flour to dust your surface.) Add a drop of olive oil to a bowl. Coat the dough and let the dough rest for 1 hour. 
  4. For your pretzels. Flour your surface.
  5. Dissolve baking soda in the water. Dip pretzels for a couple of seconds. Let them rest.
  6. Salt the pretzels lightly and bake at 350 degrees for about 12 to 15 minutes or until golden. Serve with German mustard or cream cheese.
